Thanksgiving Menu
Going to be about a dozen of us this year ... super excited.  I loved growing up with our house  filled to the brim with family.  My kids missed out on that -- but now that they are older and have some family of their own, we are doing it big!   Lexi's family will be joining us this year so that's wonderful.  I hope it becomes a tradition for years to come .... and next year, Lord willing, we'll have a little guy to spoil and enjoy.

Menu Plan Monday ... 30 August 2010

Cereal isn't going to cut it anymore, I don't like cereal for breakfast but I do not mind it for dinner.
Rice Krispies with strawberries and skim milk=Yum!
(Hub doesn't agree, but the boys never minded)

Would you believe school hasn't started for Leavenworth yet?   School remodeling and building weren't completed on time ... 7 September is the day!



Here's some meals I can make/or want to make, but at least if I have options, its easier.  Hub doesn't get home till 8pm and I can't eat that late.

Grilled Cajun Chicken and Sweet Potatoes

Salad and Veggies and Fruit (always on the plates now)

Grilled Turkey Sandwiches with Tomatoes (made this for hub last week, he really liked it.  Of course it had bacon in his ... anything with bacon is good!)  (Like a Panini, but I don't have one of those grills!)

Chicken Spaghetti

Naan Pizza on the Grill  (using Naan flat breads to make pizza on grill)  Not sure about doing my own dough on there yet!)

Vegetable Bean Soup with Spinach (it is gets cold!)

Lemon Pepper Tilapia

Hamburger Special with Orzo (hub really likes this -- and has asked for it!)

I've been craving Buffalo Chicken .... so will probably make that one night.

Menu Plan Monday -- March 29th

Easter Week -- I've been playing Farmville on Facebook, since a little before Christmas.  I'm not a veteran farmer -- some people have amazing farms -- I get tired of it and go back to Cafe World - and then I get suckered in by eggs ... they are Easter Eggs by the way, NOT Spring Eggs.  How dumb.

The kids should close on their house on Wednesday.  Then busy season will kick in -- lots of painting and cleaning and move and organizing.  Then I get to get my house straightened up when all their stuff leaves!!   They will be missed, but I am glad for them.   God is blessing them amazingly.  

Sunday -- out to lunch with Sarai and Stephen

Monday -- Vegetable Beef Soup (it's made, it just didn't get eaten....)

Tuesday -- Lemon Pepper Tilapia, Rice and Veggies

Wednesday -- Chicken Bulgogi, Rice and Veggies

Thursday -- Pasta, Salad

Friday -- Pizza

Trying to decide what to make for Easter lunch .... I have a turkey in the freezer and a roast -- so it will be one or the other.

Menu Plan Monday ... March 22
   We had a bunch of snow over the weekend, one of my bosses totalled his truck ... thankfully no one was hurt, but the truck didn't fare as well.

  I haven't been feeling that great -- hate that -- makes my mind work overtime.

I am keeping my trust and faith in the Lord.  Even if I have to remind myself of this twenty times a day.


Here's the plan:

Monday -- Chicken Chili, Jasmine Rice, Veggies and Fruit   (make Fried Rice for lunches)

Tuesday -- Tortellini Soup (using Ground White Turkey) 

Wednesday -- Vegetable Beef Soup

Thursday -- Lemon Pepper Tilapia, Orzo, Salad, Veggies and Fruit

Friday -- Chicken Cutlets, Veggies and Sweet Potatoes

Saturday -- Chicken Bulgogi, Jasmine Rice, Veggies

Other things I want or can make:

Sugar Cookies for the kiddos

Pizza Cups for lunches

Bertolli Skillet Meals

Please pray for me ... I am getting weary ... pray for the house closing -- the mortgage company needs to get with the program to meet the auction companie's requests.

Menu Plan Monday -- March 15


It's been a crazy Monday -- the poor kids are scrambling to get paperwork for the mortgage company -- why do they always wait till the very last??

They want a copy of a cashed check, PLUS a letter from the bank having the name on the account, the account number, the amount of the check and what date it cleared, signed by a bank representative on bank letterhead.  They are going to think we've lost it.

Quiet weekend, Roy started his new job today -- and he is sick --and his first mission?  Was to drive up to Atchison (his old work) to deliver miss delivered mail.  LOL.   Too funny.

Made Crockpot BBQ Chicken, Unfried Cabbage, Spinach and Sweet Potatoes for Sunday lunch. 

Monday -- Not sure about tonight -- there is plenty of leftovers, so will probably go with that.

Have a few appointments for physical therapy and eyes so will do the list this week, and cook what I am in the mood to cook for that evening -- our freezer is packed, so trying to eat from there.

Menu Plan Monday -- March 8th
It was a beautiful weekend weather wise -- I think we have rain on the horizon .... the ground is soaked already, we really do not need more right now. 

Lexi and I took ALL the animals to the vet on Saturday.  That was an ADVENTURE.

We found out Cloud is actually a BOY.  I told them, but they wouldn't listen ... yeah.   A BOY. 

Later that evening, Lexi brought Trixi downstairs and asked me to look at her.  OH MY.   That started a little whirlwind trip to the emergency vet in Kansas City.   Her face was HUGELY swollen, she didn't look so good.   Lexi held her and I drove .... thankful the vet on duty did not charge for the exam.   It is  normally $80.00.  The receptionist said that she is one of the vets who do not charge for the exam for this sort of problem out of professioinal courtesy.  Awesome!   We only had to pay for the meds.   She is doing better today.  I don't think I can handle the loss of another dog just yet ... if ever.  =0)

My co-workers will both be on leave starting tomorrow and Wednesday -- so it shall be busy here.  I'm  thrilled.

Also going to make a batch of Breakfast Cookies (and use Agave Nectar for the sugar), Cookies for Stephen's teacher (any suggestions?) and a batch of Vanilla Rice Pudding and will be trying yogurt again in my yogurt maker.  I am going to buy some greek yogurt and use that as the starter yogurt.

We'll be handling Children's Church on Sunday -- so lots to prepare for that!   Have a great week!!

Menu Plan Monday -- 1 March 2010
Happy Monday!   {eyeroll}  So didn't want to go to work today ... when I am motivated to get things done at the house like this morning .... here I am at work.

Busy week this week, lots of things on the agenda.

The seller for the house, offered to pay  up to $2940. in closing costs.  How awesome is that?   God has been blessing my son.   He is a cheerful giver  -- at times puts me to shame, and those twice his age.  =)

Monday -- Baked Ziti, Salad and Bread   (mixed this up yesterday with some leftover pasta and sauce!)

Tuesday -- Bulgogi, Rice and Veggies

Wednesday -- Chicken Fried Rice and Leftovers

Thursday -- Chicken Cutlets, Some kind of Potatoes, Veggies

Friday -- Work Event ... so they will probably get fast food.  (Spring Food Fair!)

Sunday -- Undecided ... I am craving Chinese Food!

Menu Plan Monday -- Feb 21
I didn't keep to the plan that much  -- mainly because I was a little lazy and ended up going somewhere Wednesday, so I left them to fend for themselves after cooking some fries and turkey sausage.

I thought I'd just make a list of meals I can make and then decide that day or the night before -- most times its what I do anyway.  I have all these in the pantry.  Its a good week to use my budget to stock up on cereal and or other things that are a great price.

More snow is on the horizon .. JOY.

Shredded Chicken Tacos -- Chili's Style

Homemade Chicken Enchiladas -- I read this tip where you spray the corn tortillas with PAM Spray and then put them in the oven to crisp up.  Going to try that.

Pizza Cups -- I thought this would be good to have in the fridge for them to heat up for snacks/lunches.

Lemon Pepper Tilapia, Rice, Salad and Veggies  (going to have fish once a week from NOW on.)

Roast in the Crockpot   (will put in crockpot for ease ...)

Tortilla Soup  (won't use oil to saute the veggies/chiles though)

I'm also going to try a new recipe for Fried Rice, I will let you know if that comes out good.  Also going to cook a pot of black beans to put in the freezer -- I LOVE black beans.  Yumo.

Menu Plan on Tuesday ...

I know its Tuesday, but I didn't work yesterday and was a little busy.
I think the Ladies Valentine Tea went exceptionally well.  The decorations and food were awesome.  It was a lot of work, so I'm glad its over but wouldn't mind doing it again someday ... we need to do something for the men now.




Sunday -- We went to Lone Star Steakhouse - I had a salad, sweet potatoes and a 6oz steak. Yum.

Monday -- Chicken Fried Steak, Mashed Potatoes, Green Beans, Biscuits, Veggies

Tuesday -- Hamburger Special, Orzo, Salad/Veggies

Wednesday -- Spaghetti and Meatballs, Bread, Salad / Veggies

Thursday -- Grands Taco Melts,  (using chicken) Mexican Rice in the Slow Cooker

Friday -- Healthified Chicken Breast Cacciatore

Saturday -- Lemon Pepper Tilapia, Rice and Salad and Veggies

Sunday -- Ranch Style Chicken ( I won't fry it in oil) Fluffy New Potatoes, Salad Veggies

Found this recipe -- which I might replace something else with!  Quick and Tasy Mexican Casserole!

Here's a new week!  I didn't keep to the plan that much, but at least we had one.   It is going to be a busy week with the International Flag Ceremony and the Valentine Ladies Tea at church on Saturday, plus my hub's birthday on Sunday!!

He wanted some goats for this birthday ... he's so weird.  Gotta love him and I do.
He also has a job interview this morning at 1000, so please pray the Lord will open or close this door according to His will.

Tuesday -- Grands' Taco Melts (using chicken), Salad, Mexican Rice in the Slow Cooker

Menu Plan Monday

There I went getting sidetracked with the cares of life, I do so much better when I have a plan.   Keeps me focused.
Please pray for Lexi today, she started her new job.  To be honest, its 98% women over there and women in leadership positions, so there is lots of drama.  ugh.  I'd much rather have a man as a supervisor ANY DAY OF THE WEEK.   Much less hormonal drama.  

Sunday -- Crockpot BBQ Chicken, Cheesy Ranch Potatoes, Cabbage/Peppers/Onions

Monday -- Pork Chops, Mashed Potatoes, Broccoli, Salad and Biscuits (hub requested meal!)

Saturday -- Taking two little ladies from our church out to lunch -- so hot dogs/turkey sausage for them if they want it.

When we went to Ladies Night Out they had some food vendors and I tried their cabbage, just a tiny taste.  Boy was it good!   They had cabbage, onions and peppers in it.  I'm sure they used a bunch of oil, but I put all of those ingredients in a big pan sprayed with Pam and after cooking for a while added some water and a teaspoon of the Better than Brouillon Chicken Base.   Even Stephen ate a bunch!

A new year, a new start!   Every day is actually a new beginning.  I have been doing much thinking and planning.  Going to make the most of 2010 -- as it seems I lost about 9 months of 2009.  

New students arrive this week, so it will be a busy week.  And its FREEZING in Kansas right now. 
I don't do cold well.

Menu Plan Monday ... a litte late

I've decided that it doesn't matter how much life is crazy right now (or ever!), it's always better to have a plan.

I'm a little late but better late than never!   Then I can refer back to my blog for the recipes later if I decide to make the food again.

I seriously need another rice maker.  I had one but it bit the dust, I want to try this Rice Cooker Macaroni and Cheese Recipe.  Much better than from a box.

Monday -- Leftovers from Christmas (Ham, Sweet Potatoes, Sushi) Chicken Noodle Soup

Tuesday -- Lasagna Soup, Salad and Bread

Wednesday -- Chicken Nuggets and Macaroni and Cheese, Veggies/Salad

Thursday -- this is till up in the air ... may go to a friend's house. In that case, I'll be cooking some dishes and will post.  (Meatballs, Buffalo Chicken Dip, Cheesecake ... ??)

Friday -- New Year's Day -- Sarai is supposed to take me to Japanese for my birthday.  Yumo.

Saturday --  Turkey, Mashed Potatoes, Sweet Potatoes, Veggies, Homemade Cranberry Sauce

Sunday -- Turkey Leftovers 

Starting to get a little nervous about all this, not so much the testing but the results.  {sigh}  My co-worker this morning asked me how hard was it really on you to face all those appointments alone?  In a way it made me sad that I didn't have anyone to rely on fully to go with me. Roy would go with me for the most part, but work stands in the way.  No supervisor -- she's on vacation last week and this one.  He asked if I had a friend that I could confide in with everything, and I shrugged and said that I did not.   I have the Lord of course, and I imagine He gets tired of me too.   I don't really think I'm an unfriendly person -- I had close friends in Colorado that I did stuff with them all the time and they were at my house 3-4 times a week.  I don't know maybe the Lord decided I needed to just depend on Him during this trial.   I'm a little scared today but keep reminding and quoting scriptures and the promises of the Lord to myself.  IJN!

Menu Plan Monday -- Busy Week Ahead

Hope you all enjoyed your Thanksgiving Holiday.  We spent the day Sarai's house -- and my hub said that was the best turkey he ever had.  =)  Sarai injected it with spices and marinade -- it was yummy.  It was different not being at home, but I didn't miss that routine all that much.  Plus she has a dishwasher and we don't right now!   Kitchen remodel = 2010!  

Busy days at work the next few weeks, with one class leaving and another arriving. 
Monday and Tuesday will be spent at the warehouse preparing book shipments -- its a nice break from the office, but then you have to catch up.  Then we are headed into the Christmas holidays.  Lexi's birthday is Friday.  I work Friday evening at the Holiday Dinner Dance... then next Friday there is another!!  Wig time for sure.  Ugh!  

We decided its best to be a little laid back with Christmas gifts ... so we are pretty much done.  I need to find something personal for Sarai and something for my hub -- and a few piddly things but that's all.  I tried to get something that they can actually use -- instead of wasting money on something that will go in the trash or not be useful at all to the recipient.  It's such a waste.  I have to get tires on my car ... all those miles to the hospital Mon-Fri is wearing me out.   I have low-profile tires so that is not pretty.   And my car is acting funny so I need to get that checked. Eye appointments this week too!!   Always driving somewhere!

Since we have no turkey leftovers -- which is what I DO miss....it will be all new meal prep. But easy!!

Sunday -- Crockpot Roast w/Potatoes, Carrots & Onions, Leftover Sweet Potatoes, Broccoli, Fruit

Monday --  Pasta, Bread, Salad, Fruit

Decided that I need to get back to my schedules -- makes life easier for me.  To be honest, I have not been feeling the greatest at all.  {sigh}  Which makes my mind go nutso with thoughts.  Not a good combination at all.  I need sleep/rest.

Menu Plan Monday

Sorry internet this weekend ... debating getting one of those internet cards for your phone??  But then -- is it really that important?   Only to catch up on people, because you don't hear from them otherwise.

Been enjoying messing around on Facebook and hearing from long, lost friends.  (and keeping ahead of Josh and Sarai on Cafe World!)  

Sunday -- Dorito Casserole, Peas

Monday -- Grilled Chicken, Noodles, Veggies and Fruit  (Dentist)

Tuesday -- Pasta with Meatballs, Salad and Bread

Wednesday -- Tortellini Soup, Italian Cheese Bread   (Doctor Appt)

Thursday -- Toasted Cheese Sandwiches, Lipton Chicken Noodle Soup

Friday -- Taco Salad or Homemade Pizza (picked up some fresh mozzarella for 50 cents at Aldi!)

Saturday -- Grilled Turkey Brats/Sausage, Beans, Mac & Cheese, Veggies and Fruit

We won't necessarily have the meals on those days -- I switch them around all the time.  But I can look at this and see what's up.  Will probably make the Tortellini Soup on Tuesday night since Wednesday is  Bible Study or just do the toasted cheese and soup on Wednesday since I have a doctor appointment that day.

Menu Plan Monday!

Plans changed and we did end up going out to lunch.  It was yummy too.  I had a salad with balsamic basil vinegrette dressing and a huge sweet potato.  I don't even need butter on my sweet potatoes, I can eat them plain.  They are so sweet and yummy!!

There was a pie social at church -- wow -- lots of yummy pies.  Hub likes pecan, Josh likes pumpkin and Stephen can do without pie, period.

Busy week again this week -- I definitely didn't get enough sleep last night.  Ugh.  Tired. 

Monday -- Taco Soup

Tuesday -- Chicken Parmesan, Salad, Pasta (never happened last week)  I will make it healthier, just giving you an idea what it is -- and I won't fry the chicken in oil.

Wednesday -- Sloppy Joes, Fries and Salad.  (Radiation Oncologist - second opinion appt!)

Thursday -- Homemade Beefaroni, Salad, and Bread

Friday -- I work an event during the evening, so they are on their own.  Trunk or Treat at church. Lots of sandwich fixes in the fridge.

I hope to make a huge patch of cookies for the kiddos to give out at church on Friday evening.  Better than candy.  We'll see how ambitious I am.  It may happen, and it may not.   I also plan on making a huge pot of spaghetti sauce for the freezer.   I picked up a huge can of crushed tomatoes at Costco for $2.69 this weekend.  Can't beat that price, and I like my own much better.

The boys wanted to have a bonfire on Halloween night -- but it would involve some donations and we weren't sure if people would be able to handle 2 weekends in a row, so plans are up in the air about that one.  We may have a few over -- just to have some fun.  I can handle a little to feed, but not a lot!  LOL!

Puppies are opening their eyes, going to get some new photos tonight.  Some of them are chunks.  I love me some puppy breath!!   They smell so good in general, of course their mom stinks, but they don't.  =)

Menu Plan Monday --

Monday came early today for some reason!
Taco woke us up twice during the night to do his business.  Once about 130 (hub took him) and then at 330 (my turn).  When the alarm rang at 430, I so did not want to get up.   {sigh}

My co-worker is on vacation all week and one of the international class is gone on a Field Studies Trip all week, so it will be quiet.  I have plenty to do, just need to get motivated to actually do it. 

Sunday  - Vegetable Beef Soup (never made last week!)

Monday -- Leftovers -- Turkey Sandwiches  (Surgeon and Radiation Oncologist appts!)

Tuesday -- Chicken Parmesan and Pasta, Salad, Bread  (will adjust to make it healthier!)

Wednesday -- Pigs in a Blanket, Veggies, Fruit

Thursday -- Hamburger Patty Special, Small Pasta, Veggies  (Hub really likes this and requested it)

Friday -- Homemade Pizza or Homemade Beefaroni, Salad, Veggies, Fruit

Help us pray about today and the decisions we will need to be making this week.  I am out of sick leave and if I choose radiation, I will use 5 hours a week minimum.  Not to add the 10 extra hours of travel time per week.  And of course the health risks with it.  Not that I haven't been here before ....  I hate to second guess myself about decisions.  We really need to hear from the Lord about which direction to take.   The pathologist report read no skin involvement, but we are not doctors and don't know what this means.   I just know the thought of this very aggressive cancer that I had scares me.  It scares me a lot.  Mainly because of the unknown, but in reality our whole life is the unknown.  It's a little different knowing about the cancer -- then if you were 100% healthy.

Menu Plan Monday --

Headed back to work this week ... and the Space Carnival is next Sunday, so we will have a full week.
Although, I will always be thankful for Normal Days,
going back to my work routine is a normal day for me.
Enjoyed my time at home, spending time with my hub and kiddos, but now that they are all at work/school ... its quiet here.   

I accomplished some things, but there will always be things to get done or do. 

Sunday -- Roast in the Crockpot, Cheesy Ranch Potatoes, Veggies/Salad, Fruit

Monday -- Chicken Noodle Soup  (carnival set up day)

Tuesday -- Vegetable Beef Soup  (using leftover roast)

Wednesday -- Sloppy Joes or Pigs in a Blanket, Oven Fries, Veggies/Salad, Fruit

Thursday -- Carnival Stuff Evening -- Subway Sandwiches    =O)

Friday -- Lemon Pepper Tilipia, Rice, Veggies/Salad, Fruit


Love Pumpkin?   Josh and I do, here's some yummy recipes courtesy of Pinch My Salt.  Going to try the Whole Wheat Pumpkin Muffins ... 2 T. of oil and they look fluffy instead of dense.   Its seriously hard to find pumpkin around here.  I only have 3 cans in the pantry, so I have been hunting.  If you see some, please let me know so you can get some for us! 

Going to make this Easy Fruit Coffee Cake for Josh's work.  Will have to double it.  He's asked for something to bring, so ... I have plenty of blueberries and strawberries in the freezer.
