Thought this was really neat -- cupcakes are the big rage right now and I am admittedly a huge cupcake fan ... my husband is sending me to a cake decorating class so I can create my own (I just wanted them to be a little prettier!!)

Please pray for a letter carrier that was attacked on Saturday by two dogs. Here's the short story -- Fox 4 KC It's much worse than the story tells -- over 100 stitches in her face alone, and she is surgery today. It will probably be one of many ....

We were in Kansas City Sunday morning. My husband spoke at an inner city church. I love that church (we've been there before) -- they are just so real -- they may not be what some Christians, consider Christians, but they're not fake. What you see, is what you get. They are always so welcoming, like long lost friends. Praying that God would touch their hearts and turn their hearts toward Him. It's going to be a super busy week ... again (sigh)

Menu Plan Monday ... 23 Jan 09

This next week should not be too eventful -- I need to make a large batch of spaghetti sauce to restock the freezer (still have a bunch of cheap/free organic diced tomatoes to use up!) -- lots of things to do for a kids' event at church on the 15th of March and our Pastor's 25th Anniversary Service this week.
Sunday -- Hamburger Patty Special, Small Pasta, Veggies
Monday -- Savannah Red Rice, Veggies
Wednesday -- Taquitos, Rice, Corn
Thursday -- Spaghetti/Pasta with Marinara Sauce, Garlic Toast
Friday -- Our Pastor's 25th Anniversary Service at Church / International Dinner After
I'm bringing Sausage and Peppers/ Italian Rolls / Tiramisu
Sausage and Peppers is a good Low Carb recipe -- I use turkey italian sausage and brown with some PAM -- no need for extra oil. I add a can of tomato sauce and some seasonings after the peppers are cooked a bit and simmer together. Serve on crusty rolls or over rice/small pasta. Yummy stuff!!
Most of my menu -- I have the items in my pantry -- except for the Friday menu -- trying to use what we have. So many great deals for free or close to free groceries lately, that our freezer is pretty well stocked.

Menu Plan Wednesday....

Better late, then never ?? I do have a plan, but struggling with some (ongoing) tooth issues and just not motivated. I went to a specialist yesterday and the pain is either from two things -- 1) a root canal with too long rods (clearly seen on the screen!!) or 2) the tooth behind it has a filling touching the nerve .... Surgery will be required for #1 -- and it won't be pretty, so here is praying for #2!!
Here's what we did ... and what the plans are for the rest of the week....
Sunday -- Meatballs, Mac & Cheese and Mixed Veggies
Monday -- Pork Chops, Mashed Potatoes, Biscuits/Gravy (hub's late birthday meal)
Tuesday -- Chicken Nuggets (no breading), leftover Potatoes/Mac & Cheese, Green Beans
Wednesday -- Ravioli and Salad
Thursday -- Painting at Church for our Space Adventures Sunday -- Pizza for helpers
Friday -- Chicken Soft Tacos with Albuquerque Tortillas (hub brought back from New Mexico)
Saturday -- TBD

I'm all about weird things like that ... just ask Melinda! I insisted her son HAD to have a "C" name and of course, Squirt had to have a "J" name.

Monday -- Josh's Work Open House -- Leftovers

Tuesday -- Spaghetti and Meatballs (Sauce from Freezer/Meatballs from Kroger!)

Wednesday -- Oriental Noodles and Fried Rice (love those Aldi Oriental Noodles!!)

Thursday -- Grilled Cheese Sandwiches, Oven Fries, and Veggies

Friday -- Homemade Pizza or Taquitos
