A dad's heart ....
Here is a photo of the HUGE Jayhawk that graces one entire wall of Stephen's newly painted room. He is a huge KU Fan and wanted his room painted in KU Colors -- red, gold and blue.
My husband went the extra mile and beyond by also painting this huge jayhawk on the wall for him. The room is not quite done yet -- but its shaping up really cool!!

Menu Plan Monday - 27 October
We did pretty well last week -- except we changed meals around a bit.
My oldest son and I were talking about how a family he knows is struggling financially, yet wastes food, has a full size freezer stuffed with food but then orders pizza a few times a week for dinner. He said that's $20 a shot. Where is the sense? LOL He's learning.
Sunday -- Baked Ham, Mashed Potatoes, Carrots

Monday -- Hamburger Patty Special This looked so GOOD. I'll use lean ground beef and reduced fat soups (or make my own!) and will probably use mushroom. Rice, Veggie

Tuesday -- Leftovers


Thursday -- Grilled Brats/Italian Sausage, Orzo, Veg

Friday -- Halloween Night -- Homemade Pizza (if just hub and I, then Pizza goes to Saturday!)
Saturday -- See Friday!

Little Cat ...

My bestest cat is back ... have not seen hide nor hair of him since last Wednesday/Thursday! He is my favorite barn cat (well really the only barn cat ...) I like. I was pretty sad this morning about him succumbing to outdoor life and its predators and even prayed for him during my prayer time. On my way to work -- I always feed the cats on the way to the car, well I went outside looking for the can I undoubtedly left outside from the day before and there he was!! He is fat too -- so he obviously did some visiting and enjoyed some chow.
So ... glad he's back. It made my day!

Menu Planner and Grocery List Organization

I love Simplify 101 -- so many things that she does are SO my style. I just wish I had the time and energy to implement much more of how she organizes her home and business.

I came across this "perfect" Menu Planner and Grocery List from Aby Garvey that works perfectly in my Circa Junior Planner -- I love it! Take a peek and see if it will work for your family.

Lately it seems I must have things written down or I just forget. I really am good about remembering things, but I think my plate is too full and some things just spill over ...

Its been an interesting last few days -- we did well with our plan -- and didn't eat out but we have quite a bit of leftovers and some meals will be carried over ...

Bapple Bread Recipe
This is definitely not the best photo -- but this bread is so yummy! Its low-fat but not rubbery like a lot of fat-free baked goods are.
I am NOT a fan of banana bread but I do like this one. I made mini loaves this time instead of one large loaf. My husband liked grabbing one out of the container for an on-the-go snack.
I first saw the recipe posted by one of my artistic bloggy friends, Michelle at Ozarks Sew n' Sews who in turn found it at Mr. Food.
Bapple Bread
4 ripe bananas
1 cup sugar
1/2 cup applesauce
2 eggs (I used Aldi brand egg beaters!)
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour

Preheat oven to 350°F. Coat a 9" x 5" loaf pan with nonstick cooking spray.

Place bananas in a large bowl and mash with an electric mixer.
Stir in sugar and let stand 15 minutes.
Add applesauce and eggs and beat well.
Add remaining ingredients and mix thoroughly.
Pour mixture into loaf pan and bake 55 minutes, or until a wooden toothpick inserted in center comes out clean.
Remove from oven and let stand 10 minutes before removing from pan.
Cool on a wire rack
(For mini-loaves I baked them for about 20 minutes, then kept checking every 3 minutes until done.)

Our weekend -- and internet and fridge!
We had a busy (and productive!) weekend -- I like keeping busy. My husband says I never take a vacation and he's probably right. I just hate to waste time -- time is so precious and fleeting, it's gone before we know it.

We had a decent yard sale -- considering I only had little items, I didn't do too bad. Of course when I unloaded some of the things that did not sell, I found a couple of boxes that I forgot to bring with me. In the spring we plan on having another. I am trying to declutter our home. Too much stuff.

We had some more apples left -- they are soft so we decided to make another batch of apple butter out of them. It is cooking in the crockpot now so that I can process it in the canner this evening. My husband loves it ... (glad someone does!)

I made some Bapple Bread yesterday too! It is so yummy and low fat too.

I will post a recipe for this today. I made a huge pot of homemade spaghetti sauce and 3 pans of Baked Ziti -- 2 pans went into the freezer and one we ate yesterday. Yummy!

The Pastor spoke on Sunday about God blessing those who pay their tithes and give offerings. I had been kind of discouraged lately about our financial situation -- its not bad by any means. We are paying a lot off and we are always able to make the bills -- even after my husband took this other position which decreased our income about $600-800 a month. But then I got to thinking about it and we are more than making it with that much less!! My car will be paid off in about 3 months -- I am thrilled to not have a car payment again.

And ... God blessed. With the help of Melinda's husband -- our fridge is fixed!! Zero OOP. Of course I owe him some cookies for his help at the very least.

And ... new internet service. When I signed up last week they told me there would be a $99.00
installation charge and when they came yesterday -- the receipt said No Charge!!

How awesome is that??

Menu Plan Monday .. 13 Oct


Internet service should be restored today! Hopefully it will all work out without any issues. Since we already have the dish set up in the field -- they should only have to change computer parts and new inside equipment!!

Sunday -- Baked Ziti, Italian Bread and Salad

Monday -- Grilled Brats/Turkey Sausages, Oven Fries, Veggie (SMC like these for lunch!)

Tuesday -- In all probability == leftovers (if there is any!) Grilled Ham/Cheese if not.

Wednesday -- Chicken Taco Soup (without the beer!)

Thursday -- Sloppy Joes, Mac & Cheese, Veggie

Friday -- Pizza (using the new Pizza Crust Recipe we tried 2 weeks ago)

Internet and Fridge Down!
Both our refrigerator and our Internet have expired! Ugh! We will not be able to get access until Monday -- so I can't post any photos of the new pizza crust we tried last week -- but here is a link to the recipe. It is so good!! My guys loved it.




Try it -- its a keeper. I haven't tried the bread sticks they say it makes yet, but I am sure we will. The best part is you can get all the ingredients at Aldi, and yes corn meal is inside of the dough and not. (I did not use as much oil as the recipe for the pans -- too much for this girl!) And I just used my Kitchen Aid and let it rise in a bowl covered on the table. Thanks for Mom Advice for this great find.





Pizza Hut Style Pizza & Cheesy Bread

1 1/3 cups water
2 tsp sugar
1 1/4 tsp salt
2 Tbsp olive oil
2 Tbsp cornmeal
3 1/4 cups flour
1 tsp baking powder
1/4 tsp garlic powder
1/4 tsp onion powder
1 1/2 tsp yeast

Add ingredients to bread machine, according to manufacturer's settings, and run dough setting. After the machine beeps, roll out the dough.
You can roll the dough into two 9x13" pizzas or into two medium pizzas or a large pizza and an order of breadsticks (as instructed above).
Parbake the crust with a drizzle of olive oil on it at 450 degrees for ten minutes. Remove the crust and add sauce and toppings.
If making breadsticks, add your breadsticks at this time. Place into the oven for another ten to fifteen minutes or until golden and bubbly.Enjoy!


Pray we can find a good, used (cheap!) refrigerator soon!

Menu Plan Monday ... on Tuesday!
I really did have a plan, I put it in my planner but never posted here.

We've been canning a bunch of apples the past week and every night except for Wednesday that has been our routine.

We've made applesauce (of course!), apple butter, apple pie jam (yummy!), apple pie filling and apples with red hot syrup. We haven't canned the last it was just a trial run, but we plan on canning some of those, and another entitled Apples studded with cherries and raisins. If there are any apples left at that point -- they will be applesauce.

Sunday -- Grilled Chicken with chipotle marinade, Cheesy Ranch Potatoes and Corn

Monday -- Grilled Brats and Turkey Sausage, homemade fries and broccoli

Tuesday -- Beef Soft Tacos, Rice and Corn

Wednesday -- Clean out the fridge

Thursday -- Pasta with marinara sauce, italian bread and a veggie

Friday -- (Yard sale day!) Homemade Pizza -- I found a new recipe which I will share later this week for the dough -- we all loved it! It is a keeper.

Saturday -- OTE. Chinese Food!
