Slow Cooker Thursday-Veggie Kielbasa Soup & Book Giveaway
1/2 lb. reduced-fat turkey kielbasa, sliced
1 medium onion, chopped
1 medium green bell pepper, chopped
1 celery rib with leaves, thinly sliced
4 garlic cloves, minced
2 cans reduced sodium chicken broth
1 can great northern beans, rinsed and drained
1 can diced tomatoes, undrained
1 small zucchini, sliced
1 medium carrot, peeled and shredded
1 TB dried parsley flakes
1/4 tsp. crushed red pepper flakes, 1/4 tsp. ground black pepper
In a nonstick skillet, sauté kielbasa over medium heat until lightly browned. (you can just skip this step if your prefer) Add the onion, green pepper, celery and garlic. Sauté and stir for 5 minutes or until vegetables are tender. Transfer to a crock pot/slow cooker. Stir in the remaining ingredients. Cover and cook on LOW heat setting for 8to 9 hours. Yield: 5 servings.
