I was pretty busy this weekend and hadn't a chance to post -- but I did have a hand-written plan ...
We picked up some chicken at the deli counter (12 pieces for $1.99!) at Dillons on Friday evening so my boys ate that this weekend and Monday evening. Easy. Peasy.

Tuesday -- Hamburger Patty Special, Small Pasta, Veggies

Wednesday -- Pasta Fagioli Soup

Thursday -- Chicken Taquitos, Rice and Corn

Friday -- Homemade Pizza

Menu Plan Monday ... 18 Jan 09
Finally finished with all the evening shifts I have to work until April or May. The overtime will be nice ... but its not everything.

Snow is on the ground ... something I didn't expect! It's beautiful out there ... but the roads are a mess.
Sunday -- Roast, Cheesy Potatoes, Veggie
Monday -- Probably out to eat ... its a holiday after all ...
Wednesday -- Breakfast for Dinner -- Omelets, Toast and Fruit
Thursday -- Grilled Chicken, Mini Pasta and Broccoli
Friday -- Homemade Pizza

Menu Plan Monday
Menu Planning is such a rescue for me -- especially when I get home late from work, or have to work evenings, which this week will entail. (ugh) My husband can make sure the boys are fed, but I still prefer to have something ready for him to cook/heat up.

Sunday -- Hamburger Patty Special, Mini Bowtie Pasta, Broccoli
(I change this slightly, while the hamburgers are cooking, I heat up, 1 can 98% fat free cream of chicken soup, 1 can Rotel tomatoes and 1 large can green chilies, once hot I pour on top of meat and cover with cheese and bake) Saves a lot of time and we all like the Rotel taste it gets. The sauce is yummy over the pasta/rice.

Monday -- Pasta with Sauce, Salad
Tuesday -- Chili in crock pot and Rice (Mom works, dad cooks ... serves!)

Wednesday -- Grilled Cheese and Veggies (Mom works, dad cooks)

Thursday -- Spicy Chicken Tortilla Soup (Crock pot)

Friday -- Homemade Pizza

One Little Word ... 2009

I've decided on Grow.

GROW -- to come to be by degrees; to become:

I've decided 2009 will be a growing year for me ... to grow in areas of my life.

G -- grow in Grace / grow spiritually / knowledge

R -- grow in my relationships with family and others.

O -- organize (and simplify my life at the same time!)

W -- work on being more healthy, eating better, losing that stubborn weight, walking/exercise

Around the Web ... 2009

Happy New Year 2009!
I love a new start, a new year, but really each new day with the Lord gives us a brand new beginning. We don't a new year to have a change in our lives.

I am choosing a word this year along with Ali Edwards --and a host of others -- I've been a follower of Ali Edwards for years now -- love her scrapbook style, her ideas, and really her outlook on life. I'm debating on my word still .... I will decide by midnight tonight though!!
Found some cool links, I thought I would share, but really they are here on my blog, so they will be easy for me to find again.

In light of trying to avoid pre-packaged foods this year, as much as humanly possible -- here are 2 recipes for "Mix In The Pan” cakes using fresh from scratch ingredients.

"Mix In The Pan” Applesauce Cake After canning our own applesauce, this is perfect.

“Mix In The Pan” Chocolate Cake When you mix up one batch, go ahead and measure out the dry ingredients for another to have on hand for next time. Easy peazy.

Hot Cocoa Mix in the most simplest and cutest packaging I've seen so far. Great gift idea!

Cute, cute gift ideas ... good for birthdays too, not just Christmas.
